Best English Single Cask Single Malt Whisky - World Whiskies Awards 2020 London based micro distillery Bimber produce premium, small batch, hand crafted single malt whiskies. They grow their own barley, which is traditionally floor malted, hand-mashed, and fermented slowly for seven days in wooden washbacks that were handmade at their own cooperage. They are one of the only whisky distillers in the world to use direct fire to heat their small copper pot stills, and mature the whisky in carefull selected casks. This small batch release was matured in re-charred American oak casks that were hand charred at their own London based cooper. The deep charring process caramelises the wood sugars and influences the whisky by impartin sweet, rich, smooth, and fruity flavours. Official Tasting Notes: NOSE: Orchard fruits and spit-roasted pineapple chunks are sweetened with honey, nougat and cookie dough. Oak smoke and wood char float across the nose, whilst cinnamon and pepper spicing offers an enlivening intensity.
TASTE: Red apples and ripe pears sit alongside banana bread and pineapple juice. Caramel, butterscotch sauce and split vanilla pods combine with layered pepper and ginger spicing and a characterful note of charred oak.
FINISH: Enduring wood smoke supports beautifully fading fruits and perfectly balanced oaky dryness.
