The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvee is a blend of grapes sourced from selected plots among the Premiers Crus of the Domaine - Beaune Clos du Roi, Beaune Clos des Marconnets, Beaune Bressandes, Beaune Teurons, Beaune Champimonts, Beaune Clos des Mouches and Beaune Clos des Feves Monopole. This association of the different terroirs of Beaune Premiers Crus and among them the flagships of Chanson give to the wine a unique character and texture. It perfectly reflects the evolution of the country through 260 years of existence. Every men and women who proudly beared the colours of Chanson over centuries shared and still share a profound respect for the earth, the vine and the wine.
Food pairing Red meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Epoisses, Citeaux and Langres.
Producer The Chanson estate produces over a quarter of its own fruit requirements. The other grapes are sourced from growers selected according to their commitment to quality in alignment with Chanson’s quality Charter. Individual plot selection produces fruit which also remains separate through the fermentation and ageing processes. The soil is ploughed to encourage the vines to extend their roots more deeply and therefore better express the typicity of the Terroir. All the grapes are hand-picked at optimum maturity.
