San Giovanni is the name of Tolaini's vineyard near the town of San Giovanni a Cerreto. In the church adjacent to the vineyard there is a painting by Rutilio Manetti depicting Saint John the Evangelist ("San Giovanni") offering to Mary a chalice with a serpent, the international symbol of Saint John and chosen for this label to honor this historic land that bears his name. The grapes are manually harvested and then undergo a strict selection process; first as bunches and then once they are destemmed, the whole berries are transferred into French oak fermenters and a portion into stainless steel, where it undergoes temperature-controlled fermentation. The wine is aged for 16 months in barriques (70% new), of which 6 months on the lees and then an additional 12 months in bottle before release.
