Wine Description The Chablis Premier Cru 'Mont de Milieu' 2022 is crafted exclusively from 35-year-old Chardonnay vines rooted in white stony soils rich in fossilized oyster shells. This terroir imparts a distinctive saline minerality to the wine. The wine undergoes fermentation with native yeasts over three months at 20ºC, followed by malolactic fermentation. It is then aged in a combination of 600-litre French oak barrels (demi-muids) and stainless steel tanks, achieving a harmonious balance between oak complexity and stainless steel purity. In the glass, it presents a brilliant golden hue. The nose reveals subtle notes of pollen intertwined with a delicate vanilla fragrance. On the palate, it offers a rich, fleshy core of yellow fruit, complemented by a pronounced saline character that is emblematic of its terroir. The wine is well-structured, with a fresh acidity and a lingering mineral finish.
